Cheese Filled French Toast for Two

Serves 2

 

By adding some fresh berries to the finished product, you can make a delicious looking and tasting brunch for that special someone.

Ingredients

1 8 ounce loaf unsliced French bread
4 ounces Little Qualicum Fromage Frais (Berry), softened
1/4 cup chopped walnuts, toasted
4 SPCA Certified eggs
1 cup whipped cream
1/2 tsp vanilla extract
1/4 tsp ground nutmeg
Maple syrup  

Method

1. Beat softened cheese until fluffy. Fold in the walnuts and set mixture aside.

2. Slice bread into 5 (1.5 inch) slices, then cut each slice from the top to halfway down inside to create a pocket. Fill each slice with 1.5 tbsp of the cheese mixture. 

3. Whisk eggs, cream, vanilla and nutmeg. Dip bread slices in egg mixture and allow egg mixture to soak through the bread. Cook slices on lightly greased griddle until golden brown on each side.

4. Serve with warm maple syrup.
