4 oz. SPCA Certified cheese (any variety, chopped or grated) 2 cups of all purpose flour 3 large SPCA Certified eggs 1/2 cup buttermilk 1 tbsp baking powder 1/2 tsp paprika 1/2 tsp salt 12 tbsp cold unsalted butter, roughly chopped

Method
1. Preheat the oven to 400°F 2. Combine flour, baking powder and salt. 3. Using an electric mixer with a paddle, add butter to flour and mix on low speed until butter is in pea size pieces. 4. Add three eggs (lightly beaten) and cream. 5. Mix gently until just combined. 6. Add cheese. 7. Transfer dough to a well-floured surface and pat into a 9 inch circle. 8. Using a sharp knife dipped into flour, cut into 12 wedges. 9. Transfer wedges to buttered tray and bake for 15 - 20 minutes.
