3 tbsp olive oil 1 lb. SPCA Certified sausage, skinned and cut into 1/4-inch slices 5 potatoes, peeled and sliced 1 onion, diced 1 tsp salt 1/4 tsp pepper 8 SPCA Certified eggs, lightly beaten 2 tbsp chopped parsley 1/2 cup shredded SPCA Certified cheese (Cheddar works well)
Method
1. Heat oil in large skillet. 2. Add sausage, potatoes, onion, salt and pepper. Cover and cook over low heat, stirring frequently, until potatoes are tender. 3. Pour eggs over potato-sausage mixture. Continue cooking for 3-4 minutes or until eggs are set. 4. Sprinkle with shredded cheese and parsley. Let stand a minute or two, just until cheese melts.
Variation:
Use 5 strips of bacon instead of sausage. 1. Cook bacon until crisp; remove from pan and pat with paper towel. 2. In drippings, cook onion and potatoes. 3. Cook eggs as outlined in step 3. 4. Sprinkle bacon at the same time as shredded cheese and parsley.
