Mayonnaise

1/2 cup

Ingredients   

2 SPCA Certified egg yolks
Pinch of salt
2 Tbsp (30mL) lemon juice
1 cup (250mL) oil

Method

1. Beat the eggs, salt, and lemon juice together until smooth and pale in colour.

2. Gradually add the oil in a very thin stream and beat until it incorporates fully into the rest of the mixture. You may have to stop adding oil periodically until the oil becomes blended with the rest of the mayonnaise.

3. The finished product should be fluffy and creamy.
